Je n\u2019aimerais pas vous d\u00e9cevoir, mais <\/span><\/span><\/span><strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>bienvenue \u00e0 Santorin, l\u2019\u00eele des vins blancs<\/b><\/span><\/span><\/span><\/strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Il existe certes quelques rouges int\u00e9ressants, mais la v\u00e9ritable star ici \u00e0 Santorin est un c\u00e9page vraiment unique nomm\u00e9 Assyrtiko. L\u2019Assyrtiko couvre la plus grande partie de l\u2019\u00eele, environ 80 %. Il existe \u00e9galement deux autres c\u00e9pages \u00e0 Santorin appel\u00e9s Aidani et Athiri. Bien s\u00fbr, d\u2019autres vari\u00e9t\u00e9s sont cultiv\u00e9es plus rarement, mais ces trois c\u00e9pages (Assyrtiko, Aidani et Athiri) participent \u00e0 un assemblage qui nous donne l\u2019appellation <\/span><\/span><\/span><em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">PDO Santorin<\/span><\/span><\/span><\/em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">, qui signifie <\/span><\/span><\/span><strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>A<\/b><\/span><\/span><\/span><\/strong><em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">ppellation <\/span><\/span><\/span><\/em><strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>d<\/b><\/span><\/span><\/span><\/strong><em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">\u2019origine <\/span><\/span><\/span><\/em><strong><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>p<\/b><\/span><\/span><\/span><\/strong><em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">rot\u00e9g\u00e9e<\/span><\/span><\/span><\/em><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Je sais que les lecteurs de cet article peuvent rechercher des notes de d\u00e9gustation sur les vins locaux. J\u2019y viendrai apr\u00e8s avoir expliqu\u00e9 pourquoi ces vins sont si uniques.<\/span><\/span><\/span><\/p>\n<h2 class=\"western\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>VINS DE SANTORIN ASSYRTIKO<\/b><\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Comme je le dis toujours, tout commence par le sol. Aujourd\u2019hui, on peut trouver l\u2019<a href=\"http:\/\/www.newwinesofgreece.com\/assyrtiko_santorinis_3\/en_assyrtikosantorini_1.html\" target=\"_blank\" rel=\"noopener noreferrer\">Assyrtiko<\/a> cultiv\u00e9 dans de nombreuses autres r\u00e9gions de Gr\u00e8ce ainsi qu\u2019en Australie, mais les vins issus des raisins de Santorin pr\u00e9sentent trois caract\u00e9ristiques majeures :<\/span><\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Une forte min\u00e9ralit\u00e9<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Une acidit\u00e9 tr\u00e8s \u00e9lev\u00e9e<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Un degr\u00e9 d\u2019alcool \u00e9galement \u00e9lev\u00e9<\/span><\/span><\/span><\/li>\n<\/ul>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">C\u2019est aussi simple que cela, en fonction bien s\u00fbr du proc\u00e9d\u00e9 de vinification. L\u2019Assyrtiko peut offrir des ar\u00f4mes qu\u2019aucun autre c\u00e9page ne peut donner. La fermentation en cuve inox remplit le palais de tension et de min\u00e9ralit\u00e9, avec une grande fra\u00eecheur ainsi que des ar\u00f4mes d\u2019agrumes, tandis que la fermentation en f\u00fbt de ch\u00eane fait ressortir des notes fum\u00e9es, de fruits secs et des saveurs de fruits \u00e0 coque.<\/span><\/span><\/span><\/p>\n<h2 class=\"western\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>VINS DE SANTORIN NYCHTERI<\/b><\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Un autre vin typique de Santorin est le Nychteri. <a href=\"http:\/\/www.newwinesofgreece.com\/nychteri\/en_nychteri.html\" target=\"_blank\" rel=\"noopener noreferrer\">Nychteri<\/a> vient du mot \u00ab Nychta \u00bb et signifie \u00ab nuit \u00bb en grec. Autrefois, les raisins \u00e9taient r\u00e9colt\u00e9s pendant la journ\u00e9e et press\u00e9s la nuit afin de profiter des temp\u00e9ratures plus basses. Aujourd\u2019hui, les choses sont assez diff\u00e9rentes.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Pour le Nychteri, les viticulteurs effectuent une vendange tardive, ce qui entra\u00eene une d\u00e9shydratation des raisins et donc une concentration plus \u00e9lev\u00e9e en sucres. Ces sucres sont n\u00e9cessaires pour \u00eatre transform\u00e9s en alcool, car ce type de vin doit contenir un minimum de 13 % vol.<\/span><\/span><\/span><\/p>\n<h2 class=\"western\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>VINS DE SANTORIN VINSANTO<\/b><\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Outre les vins secs, Santorin est \u00e9galement c\u00e9l\u00e8bre pour ses vins doux. Je ne suis pas moi-m\u00eame un grand amateur de vins de dessert, mais dans ce cas pr\u00e9cis, je ne dirais pas non \u00e0 un verre de <a href=\"https:\/\/www.greeceandgrapes.com\/en\/vinsanto\" target=\"_blank\" rel=\"noopener noreferrer\">Vinsanto<\/a>, le vin doux typique de Santorin. La teneur en sucre de ce vin peut sembler effrayante pour ceux qui n\u2019aiment pas les vins doux ou pour ceux qui suivent un r\u00e9gime. Le Vinsanto contient environ 220 g de sucre par litre, mais c\u2019est l\u00e0 encore que l\u2019Assyrtiko fait la diff\u00e9rence. Gr\u00e2ce \u00e0 sa forte acidit\u00e9, il \u00e9quilibre la sensation de douceur du Vinsanto.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Les raisins destin\u00e9s \u00e0 la production du Vinsanto sont vendang\u00e9s tr\u00e8s tardivement, bien plus que ceux utilis\u00e9s pour le Nychteri, puis laiss\u00e9s au soleil afin de se d\u00e9shydrater davantage et d\u2019augmenter leur teneur en sucre. Ce proc\u00e9d\u00e9 varie selon les producteurs : plus les raisins restent au soleil, plus le taux de sucre est \u00e9lev\u00e9. C\u2019est pourquoi certains Vinsantos atteignent presque 300 g par litre. Apr\u00e8s la fermentation, le Vinsanto est \u00e9lev\u00e9 en f\u00fbt de ch\u00eane pendant au minimum 2 \u00e0 3 ans.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><span style=\"color: #000000;\">Il serait impossible de visiter toutes ces caves importantes en bus public.
