Hoy en d\u00eda podemos encontrar <a href=\"http:\/\/www.newwinesofgreece.com\/assyrtiko_santorinis_3\/en_assyrtikosantorini_1.html\" target=\"_blank\" rel=\"noopener noreferrer\">Assyrtiko<\/a> cultivado en muchas otras regiones de Grecia, as\u00ed como en Australia, pero los vinos elaborados con uvas de Santorini tienen tres caracter\u00edsticas principales:<\/span><\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Alta mineralidad<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Acidez muy elevada<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Tambi\u00e9n alto grado alcoh\u00f3lico<\/span><\/span><\/span><\/li>\n<\/ul>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">As\u00ed de simple, siempre dependiendo del proceso de vinificaci\u00f3n. El Assyrtiko puede ofrecer aromas que ninguna otra uva puede dar. La fermentaci\u00f3n en acero inoxidable llena el paladar de tensi\u00f3n y mineralidad, con gran frescura y aromas c\u00edtricos, mientras que la fermentaci\u00f3n en barrica aporta notas ahumadas, fruta seca y sabores de frutos secos.<\/span><\/span><\/span><\/p>\n<h2 class=\"western\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>VINOS DE SANTORINI \u2013 NYCHTERI<\/b><\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Otro vino t\u00edpico de Santorini es el Nychteri. <a href=\"http:\/\/www.newwinesofgreece.com\/nychteri\/en_nychteri.html\" target=\"_blank\" rel=\"noopener noreferrer\">Nychteri<\/a> proviene de la palabra \u201cNychta\u201d y significa \u201cnoche\u201d en griego. En el pasado, las uvas se cosechaban durante el d\u00eda y se prensaban por la noche para aprovechar las temperaturas m\u00e1s bajas. Hoy en d\u00eda, la situaci\u00f3n es bastante diferente.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">En el caso del Nychteri, los viticultores realizan una vendimia tard\u00eda, lo que provoca que las uvas comiencen a deshidratarse y aumente su contenido de az\u00facar. Estos az\u00facares son necesarios para transformarse en alcohol, ya que este tipo de vino debe contener un m\u00ednimo de 13 % vol.<\/span><\/span><\/span><\/p>\n<h2 class=\"western\"><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><b>VINOS DE SANTORINI \u2013 VINSANTO<\/b><\/span><\/span><\/span><\/h2>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Adem\u00e1s de los vinos secos, Santorini tambi\u00e9n es famosa por los vinos dulces. Personalmente no soy un gran amante de los vinos de postre, pero en este caso no dir\u00eda que no a una copa de <a href=\"https:\/\/www.greeceandgrapes.com\/en\/vinsanto\" target=\"_blank\" rel=\"noopener noreferrer\">Vinsanto<\/a>, el vino dulce t\u00edpico de Santorini. El contenido de az\u00facar de este vino puede parecer una pesadilla para quienes no disfrutan de los vinos dulces o est\u00e1n a dieta. El Vinsanto contiene aproximadamente 220 g de az\u00facar por litro, pero una vez m\u00e1s es aqu\u00ed donde el Assyrtiko marca la diferencia. Gracias a su alta acidez, equilibra la sensaci\u00f3n de dulzor del Vinsanto.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Las uvas destinadas a la elaboraci\u00f3n del Vinsanto se vendimian muy tarde \u2014mucho m\u00e1s que las utilizadas para el vino Nychteri\u2014 y luego se dejan al sol para deshidratarse a\u00fan m\u00e1s y aumentar el contenido de az\u00facar. Este proceso var\u00eda seg\u00fan el productor: cuanto m\u00e1s tiempo permanecen las uvas al sol, mayor es el nivel de az\u00facar. Por eso algunos Vinsanto alcanzan casi los 300 g por litro. Tras la fermentaci\u00f3n, el Vinsanto envejece en barricas de roble durante un m\u00ednimo de 2 a 3 a\u00f1os.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #222222;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><span style=\"color: #000000;\">Ser\u00eda imposible visitar todas estas importantes bodegas utilizando el transporte p\u00fablico.
